About the Event

An initiative by "Food Consulate" in association with "Fondbites" to support and encourage the trade and new talents across South India. It is a 3 day competition and awards for Students (Basic Cakes) and Home Bakers (Intermediate).
Established in 2015 as a high end studio for Culinary Workshops and Education, Food Consulate flourished into a full fledged Pastry and Bakery training academy in 2016. Currently Food Consulate has graduated many batches of diploma students in Baking and Patisserie. Food Consulate has also helped entrepreneurs and chefs to sharpen and enhance their subject matter expertise in the Pastry-making and Baking components of their businesses.
"Fondbites School of Sugar Art" offers aspiring bakers and cake decorators across the globe, their much-acclaimed online courses that prepare you to develop your signature style in baking and cake decorating. Ms Subhashini Ramsingh, the founder of Fondbites is an accomplished cake artist in India and is heralded as one of the best in India


Open Cake Challenge

Day 1: Students - Basic Cakes - No Assembly Required

We will be reaching over 75 schools and colleges (with affinity to culinary arts & science), requesting the students to participate in this day's event. We expect around 100 students to enter this category, where they are required to bake the cake at their place of choice and place it in the allocated area in the venue. There will be a small interview about the cake by the filtering officials to validate if they have actually baked the cake.


Day 2: Home Bakers - Intermediate Cakes - Assembly Required

We have more than 400 home bakers (who bake regularly) based out of Chennai and would be reaching out to them to participate in this competition. This particular segment is growing and we anticipate around 100 participants or more to compete in this segment. Being slightly more experienced in Baking, we would be asking them to present an advanced form of cake which involves more artistic and cake engineering skills.


Judges & Results

We have lined up a few Senior Pastry & Executive Chefs who will be a part of the judging panel. The set of rules and regulations will be released shortly along with the panelist list which will also encompass some Top Indian Cake Artists. The Judge's decision will be final and binding. The results of each day will be announced at the end of the day in our official social media page and the final prizes will be distributed by VIPs from the Bakery Industry along with the Judges on the same day. All participants will be awarded with a participation certificate with a soft copy of the photograph shot professionally.

Judges

Joonie Tan

Joonie Tan is Executive Pastry Artist of Lavonne Academy of Baking Science and Pastry Arts and Lavonne Cafe. Brand Ambassador for Pettinice fondant by Bakels, Top 10 Cake Artist awarded by Cake Master magazine,UK...her love and passion for cake decoration makes Joonie a cake artist par excellence.

Apart from specializing in cake orders from wedding cakes to celebration cakes, she also teaches as a faculty in Lavonne Academy. Here she teaches advanced baking and cake decorating skills and techniques.

She has trained under some of the best names in the industry like her mentor the late Chef Kong Yik Hong to Margaret Carter and Kelvin Chua and Kaysie Lackey. Her exceptional works have been published in various local and international publications like Harpers Bazaar India, Vogue India, Elle India, DIY Wedding Magazine US and Cakes Decor.


Arati Mirji

Arati Mirji is an acclaimed Sugar Flower artist living in Bengaluru India, pursuing her passion - Cake Art - Her forte being making life like sugar flowers. She comes from a family of artists and it is perhaps this pedigree that has helped her reach where she is today.

She started this pursuit a little over four years ago.

She is the Winner in the Sugar flower category At Cake Masters Magazine Awards-2018. She has also won the 1st place Gold in the Sugar flower category of "Fireworks" at Cake International 2018. She was also chosen as one of the top ten Artist for Cake Masters Magazine India - 2017 & 2018 consecutively. Her creations have been featured in various National and International Magazines and she has won many awards in international sugar flower forums.

She is forever in the pursuit of making different varieties of sugar flowers -trying to get as close to nature as possible. The biggest complement to her is when people ask her whether the pictures she puts up of her work are real flowers!

Her goal is to make flowers that seem to be in bloom on her cakes and the bees and the butterflies choose them instead of the garden!



Chef Arvind Prasad

Chef Arvind's entry into pastry wasn't actually intentional. He joined Hotel management in 1998 and decided to be chef. His love for eating dessert and sweet tooth made him choose Pastry as a career. His Father wanted him to become an engineer though he was always fascinated to do things differently. Adapting colour techniques and flavor profile made his entry in the world of international style pastries.

Soon he got an opportunity to work with some of the finest International pastry chefs at Hyatt. He was always fascinated about chocolate and science behind baking. His performance was well appreciated and soon he was one of the core members of pre-opening Team of Park Hyatt Dubai.

Leading the team in setting standard for pastry was his key motivation to learn new techniques. While he continued to push the boundaries of the sweet course, he was offered to join Panini-The Pastry Shop in Grand Hyatt Dubai. He was engaged with Hyatt most qualified Pastry - Chef Gottfried Schutzenberger. He is still his role model. Coming from both savory and pastry training, he created desserts marked with interesting textures and thoughtful integration of savory and sweet.

He later moved to ITC for pre-opening property and set the new International style dessert throughout operations. He also continued and extended support to other ITC hotels in country. In 2014 he received the title for "Best Chocolate Showpiece" in the country, in World Chocolate Master. Later he designed signature modern pastries for Fabelle - The luxury Chocolate Boutique by ITC hotels.

Though he was very happy working with ITC hotel, but somewhere in his mind he wanted to spread his knowledge to others and spread sweetness. To materialize his thought, he decided to open a pastry and baking school Whitecaps International School of Pastry and the big day was 16th November 2016. This was a beginning of creating new benchmark and living the dream to bring best pastry chefs for the industry and platform for Cake artist. Arvind enjoys with Young minds and he believes that he himself learns from them.


Anna Austin (Anna Mathew Vadayatt)

Cake Canvas - happiness in a box' is a cake design studio in the far shores of Kerala, conceived by the immensely talented Anna Mathew Vadayatt who is forever pushing the boundaries of cake art to greater heights through themes and ideas that inspires her. The name says it all. The designer strives with each of her creations to reach out and spread happiness to those who view her creations. The artist is heavily influenced by Indian art and loves to embody the vast and colourful cultural heritage through her chosen path of art. The creative artist has been making beautiful designs brimming with life out of rich chocolate cakes and heavenly sweet fondant for the past seven years.

Anna has mastered the art of people modelling and has brought the technique to the forefront of Cake designing in India. She is recognized as one among the top in Modelling Excellence as a finalist at the Cake Masters Magazine Awards 2015 and winner of the Modelling Excellence Award at Cakeology 2018. She was a member of the Steampunk Collaboration which won the Cake Masters Collaboration Award 2018 and is one among the Cake Masters India Top 10 in 2017 and 2018. She was one of the judges for the Indian Cake Awards 2019.
